Are you a Pinterest fan? I am. Constantly on there finding recipes, how to's, and of course, lots of sayings. And you know that I like Martha. You know who I'm talking about. Whether you like her or not, the woman has some great ideas there. On Pinterest a month or so ago I saw a picture of this recipe. I tried it and it was a super hit with my guys and me. The Dutch Baby Pancake is definitely a keeper. Follow the link to get the recipe. It's Martha's and not mine. I didn't tweak it any so I don't feel right copying the recipe to my blog.

Doesn't that look totally delish? The browner spot is from melted butter that got a little browner than normally I would let it get, and yes there is a little much sugar on top of that puppy. It takes maybe all of five minutes to put together in the blender, less than that if you have all the ingredients there at your finger tips, and 20 minutes to bake. Add fresh fruit and maybe some sausage or bacon as a side and you have a great special occasion or anytime breakfast. What was our special occasion? None, we just felt like treating ourselves today. <Smile>

Recipe Friday: Peanub Butter - Nutella Buttons
Everywhere it seems these days people are talking about Nutella. Even on Pinterest you can do a search and find different recipes. Well, since my crew loves Nutella, I thought I'd see about making some cookies.
I am a big fan of flourless peanut butter cookies. Easiest thing in the world to make and most people are surprised that it takes only 3 ingredients. I thought well now, how about nutella cookies in the same fashion? I tried that. They spread too much, got crunchy-chewy, and just didn't taste right to me. J ate some, but he wasn't enthusiastic about them. I have what's left of them in a bag to see if hubby likes them.
I wasn't ready to give up yet. I thought about trying them with half peanut butter, half Nutella and see how that worked. It was perfect! They taste yummy. Just ask my official taste tester, J. He grinned and stood by the cookies several times while I was baking.
It's a really simple recipe, just four ingredients. Nope, I didn't leave anything out, I promise. If you try them, please let me know what you think. Please don't ask about WW points or calories because I have no clue how to tabulate all that.
Peanut Butter--Nutella Buttons
Preheat oven to 350 degrees farenheit
1/2 (one half) cup peanut butter (I used Full Circle organic creamy peanut butter but any type will do except the type you have to stir each time)
1/2 cup Nutella
1 cup sugar ( i used regular granulated sugar)
1 egg
Mix ingredients well. Form into small balls, more or less the size of a marble. Flatten on ungreased baking sheet. They will work better if they are more or less the size of nickels or quarters, but smaller or slightly larger works well also. Depending on size of pan I usually put about 3 or 4 to a row on the short side. Bake 8 to 10 minutes at 350.
Yields about 3 dozen, give or take, depending on the size of the cookie. Enjoy!

Jimi's Chimis--recipe
Ohh, I wish I had a camera here. Maybe I'll get one by Christmas time. Hubby was sweet and made dinner tonight. He knows how much J and I love shrimp chimichangas at the local Mexican restaurant.. We can't afford going there a lot so he made them at home this time.
Here is his recipe, as he tells it to me.
Jimi's Chimi's
1 16 oz can refried beans, heated
1 12 oz pkg of tail off, pre cooked salad shrimp. , thawed and rinsed.
1teaspoon cumin
2 teaspoons chili powder
a shake or two of onion and garlic powder (to taste)
a teaspoon of lemon juice
Mix all ingredients together in a warm skillet.
In another skillet put a pat of butter and melt it on medium heat. Add a tortilla, then add about a third cup of the shrimp/refried bean mixture into the middle. I folded one corner up, then folded either side on top of that. Flip the chimi over onto the other side to seal it and let it cook a minute or so more. If we'd had cheese we would have drizzled that on top. But they sure were delicious either way!
